Flour made from glutinous rice , a type of very sticky short grain rice widely used in Asian cuisine , in a 400-500g format depending on brand and availability.
As we said, the maximum use of this type of rice and its flour is because it can withstand cold and heat without altering the cooked product at all. It is used as a thickener and as an agent to bind products that have gone through the oven.
Despite the glutinous name, it does not contain any gluten, which makes it suitable for free diets, however, it does not have any type of certificate and may contain cross contamination.
And the greatest use known to us is for the preparation of mochis , the typical Japanese paste filled with anko (adukis, chestnut, green tea).
