Mama Sita's Filipino condiment for noodles , pancit palabok is one of the most popular among the street food stalls in Manila and throughout the Philippines.

Pancit is the usual way of calling noodles in the Philippines. Made from rice or corn starch, these noodles are usually eaten on special and festive occasions, such as birthdays, as they symbolize long life and good health. Among the best-known pancit is the palabok.

With garlic, black pepper, cane sugar and annatto powder , this seasoning is created that you must dissolve in 625ml of water or broth after cooking, then we will make the noodles according to the instructions (since they can be of different sizes, from 1 millimeter up to 10 mm) in the wok or frying pan we will brown chopped garlic and tinapa (they are fish flakes, if they cannot be obtained we can ignore them, we will test with dashino moto or katsuobushi), we will add the Palabok Mama Sita's seasoning and bring to a boil letting it thicken enough to coat the back of a spoon

We put it on top of the noodles and serve by putting fried or hard-boiled eggs, pieces of pork, shrimp, tofu, chives on top, whatever we like the most and adding a small touch of fish sauce and lime.
