What is gohan? It means boiled rice but for Japanese cuisine it is much more than that. The way to prepare this type of rice is simple but it has its ceremony:
- If you are going to make rice for any type of sushi you will need approximately 1 and 1/3 of water for each cup of rice
- if it is for accompaniment, the ideal is a 1:1.5 proportion (one cup of rice per one and a half cups of water). This is an approximate figure, each teacher has their own booklet, and there are those who use a higher proportion of water, The practice and taste of each one is what will decide in the end but, really, we move in those proportions 1:1,3 1:1,4
The important thing is to wash it first very well and thoroughly, stirring the rice with your hand so that it releases all the starch. When the water changes color and comes out transparent, it is time to let it rest for half an hour, covering with a little more water if necessary. .
When it comes to cooking, unless you have a suihanki (cooking machine), the ideal is to put the rice in the water, on high heat and uncovered, when the water starts to boil, lower the heat and cover it, leaving it for about 20 minutes. .
The rice is ready, now depending on what use we want, we will add the necessary seasoning.
