Ghee is a typical butter from India and in the rest of South Asia, it is clarified butter made from 99.8% butterfat (the fat portion of milk).
Its culinary use is very high, due to its possibility of heating up to 205º for better frying and sautéing, essential if one wants to make good curries or one of the most popular dishes of Indian and British cuisine such as Chicken butter.
It is also very useful diluted to paint the tandoori chicken after it comes out of the oven.
Another advantage is that it keeps much better than traditional butter both in the refrigerator and at room temperature.
