Garam Masala means: mixture of spices , it is one of the fundamental bases in Indian cuisine, especially that of the North. In this case it differs from the other types of garam masala by having Kashmiri chili among its ingredients, making it have a special touch to the rest of the garam masalas.
With almost always equal proportions, cardamom prevails accompanied by cassia, black pepper, cinnamon, cumin or coriander. If added to the meat at the end, it gives a touch of sensational dressing, also used in vegetarian dishes with chickpeas, spinach, potatoes or cauliflower.
