As it is fresh, small pits may appear on the product during shipment, nothing happens, it is simply peeled and that's it.
If you are not going to consume everything immediately, you can store it in the refrigerator or freeze it, the same as you do with ginger.
The poor man's saffron or Indian saffron is highly appreciated in the gastronomy of South Asia due to its flavor and being a very powerful colorant in foods. We can grate it to make our homemade curry, pickle it in vinegar, on top in salad or as a substitute for ginger due to its more subtle and fruity aroma, and less spicy of course.
