Nam Thai curry paste as it serves as a base to prepare fish curry or to serve directly on noodles.
Made from chillies, galangal, garlic, lemongrass , shallots and salt, this namya curry paste is a medium spicy food that is also reduced by the use of a good amount of coconut milk for its preparation.
For 3-4 people, we take about 200g of fish, preferably white and with a good fillet, and we cook it. In a separate bowl, we place 60g of namya curry paste with 400ml of coconut milk and stir well until it has melted. Dissolved the paste, we put it on the fire and let it boil gently.
We serve on top of the fish and season with more ingredients if desired, such as fish sauce, basil or more kaffir lime.
