Japanese style somen noodle in 300g format
The somen noodle , made from wheat flour (97%) and salt, has several peculiarities: it is a thin noodle, it is stretched instead of cut and is served cold (although it can also be served hot but this is not usually the case).
The curious thing is that in some restaurants they use natural streams to cool and even serve the noodles, which are then dipped in tsuyu (a broth-like sauce) made, mainly, using katsuobushi or dried bonito flakes.
