 The sardines are gutted manually one by one and then passed through the grill, where they are placed very carefully, so that the sardine skin does not come off during the process.
At Güeyu Mar they are masters at perfectly controlling the time and height of the embers to ensure that each fish maintains all its flavor, texture and, in the case of this preserve, the aroma of oak and holm wood smoke.
Its careful elaboration does not allow a high production of this product, thus being very limited.
According to Abel Álvarez (owner and chef of the restaurant), Ferrán Adriá, during his visit to Güeyu Mar, said that they were the best sardines he had ever tasted.

Ingredients: Sardines (sardina pilchardus; origin in Spain), extra virgin olive oil (30%) and salt.
